Maria Camila Gallego, age 35, is a fashion designer who has found her true passion in coffee growing. She belongs to the third generation of coffee growers in her family and is the first woman to continue the legacy.
While working in the Colombian Pacific, Maria Camila felt a strong calling to return to her family's coffee farm, reminiscing about her roots and the joy her grandfather, father, and uncle shared while talking on the farm. Currently, Maria Camila and her family are committed to transforming coffee, infusing each bean with a rich history, love, and tradition that has been passed down for three generations.
Maria is a very dedicated coffee producer who follows a meticulous process to ensure the highest quality crop. The cherries are carefully harvested and selected twice, guaranteeing consistency & excellence. They are then pulped and left to ferment for 30 hours before being washed and dried using the traditional Colombian coffee processing method. This method is deeply rooted in Maria Camila’s family legacy, infusing each coffee bean with their passion and history. In the cup with our offering, look for gentle notes of apple peel & caramel, with a delicate black tea like body.
This coffee thrives with age.. Give it about a week or so (after the roast date) to rest before brewing! It will get better and better with time. ❣️
